Our Story

When we decided to build our home in Round Top, Texas, we knew we wanted cattle on the land. There is something grounding about having animals that belong to a place — animals that slow you down and connect you to the rhythm of the seasons in the Texas countryside.

At the same time, we were honest with ourselves. We are not getting any younger, and the idea of managing large, high-maintenance cattle did not feel realistic for the long term. We wanted animals that were still unmistakably “cattle,” but that we could handle comfortably and enjoy without constant heavy labor.

That is when we discovered miniature Scottish Highland cattle. They have the iconic long, flowing hair, the gentle eyes, and the classic Highland presence — yet they are significantly smaller, easier to work with, and known for their exceptionally docile temperaments. These mini Highland cows felt like the perfect fit from the very beginning — ideal both as beautiful livestock and as true highland pets for families.

Round Top Fold is the result of that decision. We are building a small herd of miniature Highland cattle with intention: selecting for calm disposition, sound structure, and the classic Highland look, while using artificial insemination to bring in the best available genetics. Our goal is a consistent group of roughly ten cows that produce quality heifers with the kind of gentle nature that makes them a true pleasure to own.

This is not a large commercial operation. It is a carefully tended fold of mini Highlands on land we love, in a community we are proud to call home in Round Top, Texas. We look forward to sharing it with others as the herd grows.
