We’re just getting started.
When we decided to build in Round Top, we knew we wanted cattle on the land. We also knew we needed animals that fit the season of life we’re in — something manageable, beautiful, and genuinely enjoyable to work with. That search led us to Highland cattle.
These cattle carry the classic look of the breed: long, flowing hair, quiet eyes, and a sturdy presence. They are hardy, people-oriented when raised with consistent handling, and a natural fit for a small fold on acreage. Traditional Highlands are horned — that is part of the breed, and we work with the cattle as they are.
Round Top Fold is a small, intentional project. We’re aiming for a herd of roughly ten cows, using artificial insemination to bring in strong genetics, and selecting first for calm disposition and sound structure. Quality over quantity. If we include miniature Highlands in the fold, those animals will be registered with the International Miniature Cattle Breeders Registry (IMCBR). Our program is grounded in membership with the American Highland Cattle Association.
This blog will be a simple record of the journey — the decisions, the learning curve, the first calves when they arrive, and life on the place. We’ll also share practical notes that might help others who are considering Highland cattle or small-scale cattle in Texas.
