We’re just getting started.
When we decided to build in Round Top, we knew we wanted cattle on the land. We also knew we needed animals that fit the season of life we’re in — something manageable, beautiful, and genuinely enjoyable to work with. That search led us to miniature Scottish Highlands.
These cattle carry the classic Highland look: the long, flowing hair, the quiet eyes, the sturdy presence. But they come in a smaller package that makes daily care more realistic. Their reputation for calm, docile temperaments sealed the decision. They felt like the right fit.
Round Top Fold is a small, intentional project. We’re aiming for a herd of roughly ten cows, using artificial insemination to bring in strong genetics, and selecting for gentle disposition and polled (naturally hornless) animals whenever we can. Quality over quantity.
This blog will be a simple record of the journey — the decisions, the learning curve, the first calves when they arrive, and life on the place. We’ll also share practical notes that might help others who are considering mini Highlands or small-scale cattle in Texas.
